Ceviche
Marinade
½ cup orange juice
¼ cup lime juice
¼ cup lemon juice
¼ cup passion fruit juice
½ tsp salt
1 TBSP sugar
½ tsp cayenne pepper
1 TBSP grated ginger
Assembly
12 oz wt grouper – sliced very thin
Marinade from above – all
1 TBSP jalapeno – seeds removed – sliced 1/8”
2 oz wt red onion, sliced 1/8”
2 oz wt red bell pepper, 1/8”
2 oz wt yellow bell pepper, 1/8”
Combine all ingredients and refrigerate for a minimum of 30 minutes and up to 2 hours.
Suggested Presentation
Plate in a martini or cocktail glass
Garnish with radicchio leaf and lime
Place on 10” plate
Garnish with tropical chips
