Golden Pineapple and Coconut Salsa
2 cups Golden Pineapple, cut in ½-inch dice
½ cup Toasted Coconut Flakes
2, stemmed, seeded and chopped - Jalapeno peppers
1/3 to ½ cup- Finely chopped cilantro leaves
3 Tbsp – Coconut Rum
1 small - Red bell pepper diced
1 TBSP - Sugar
Kosher salt - to taste
Place all ingredients in mixing bowl; gently fold together until evenly mixed. Refrigerate, covered for up to 2 days.
